Refresher Bar Cake

Recipe by Cat Walsh (The Cake Cuppery)


Tall cake (use half of everything if you want to do a smaller cake):

  • 2 x boxes of Homecook Lemon Drizzle Cake Mix
  • 300g smooth margarine
  • 6 medium eggs
  • 200ml low-fat milk
  • 4 tbsp warm water (for the icing mix)

Buttercream (to fill & ice the cake):

  • 500g icing sugar
  • 250g unsalted butter
  • Splash of water to loosen it up


  • 1 x small packet of lemon popping candy (or approx. 25g)

Refresher bark (double this if you want extra):

  • 1 x Homecook Wonderbar White Chocolate
  • 1 x refresher bar


  1. Use the Homecook Lemon Drizzle Cake Mix to make the tall cake. Put all ingredients in one bowl and mix for approximately three minutes with an electric mixer.
  2. Pour mixture into 4 x 6” tins lined with parchment paper.
  3. Pop in a preheated oven at 180 degrees.
  4. Test that the cake is cooked by inserting a skewer into the centre of the cake. If it comes out clean, the cake is cooked.
  5. Remove from the oven and let cool.
  6. Once cakes are cooled, trim and glaze with the Homecook Lemon Drizzle icing.
  7. Layer the cake with lemon buttercream and lemon popping candy.
  8. When you’ve finished layering pop back in the fridge for an hour before decorating.

For the decoration:

  1. Scrape off extra buttercream and use a small palette knife to create ridge by dragging along the surface of the cake.
  2. When you’re done, finish it off with some piped buttercream swirls and your shattered Refreshers chocolate bark.
  3. To create shattered Refreshers chocolate bark melt Homecook Wonderbar White Chocolate and sprinkle with smashed lemon refresher bars.
  4. Pop in the fridge to set for about 20 minutes.
